Course Description

This course provides an in-depth understanding of both the craft and business of coffee. Students will learn about coffee bean origins, processing, and roasting, and how these influence flavour and quality. They will gain hands-on experience operating espresso equipment, practising brewing techniques, and maintaining hygiene and safety standards. In addition to technical expertise, learners will explore key aspects of café management, including costing beverage menus, calculating margins, preparing licensing dossiers, and ensuring compliance within the Nepali café industry. The course also integrates creative elements such as brand identity design, store layout planning, and launch campaign development to help create engaging customer experiences. Upon completion, participants will have the practical and managerial skills needed to establish or operate a successful coffee business. The module follows a studio and lab-based learning approach, combining practical barista training, interactive workshops, and a field visit for a comprehensive, hands-on learning experience.
